Scrumptious Sirloin Steak Chili

Serves 4 |
Bacon, spices, tomatoes, what else can you ask for?
Ingredients:
1 teaspoon ground cumin |
2 cloves garlic, (minced) |
1 can diced tomatoes |
2 teaspoons dried oregano |
8 slices bacon |
1 can kidney beans |
1 green bell pepper, (diced) |
1 lb. sirloin steak, (cubed) |
1 cup corn kernels |
1 teaspoons smoked paprika |
1 onion, (diced) |
1 green bell pepper, (diced) |
Salt, (to taste) |
Ground pepper, (to taste) |
Sour cream, (for garnish, optional) |
Shredded cheese, (for garnish, optional) |
Directions:
- Cook bacon in a large saucepan until crisp on medium heat. Drain most of the liquid. Transfer bacon to a plate.
- Add garlic, steak and bell pepper to saucepan. Season with salt and pepper. Cook until steak is evenly browned.
- Cut each bacon slice in half. Crumble half the bacon over the steak. Season steak with cumin, oregano and paprika. Stir together. Cook for an additional 2 minutes.
- Add tomatoes, kidney beans and corn kernels to pan. Sprinkle with salt and pepper. Stir ingredients together. Reduce heat to simmer and cook for 35-45 minutes.
- Spoon chili into serving bowls. Crumble remaining bacon over top, add a dollop of sour cream and shredded cheese if desired.
