Peach Raspberry Crumb Bars

A simple homemade treat that’s perfectly sweet.

Ingredients:

For the Crust and Topping:
1 1/2 cups flour
1/2 cup rolled oats
1/2 cup sliced almonds
1/2 cup light brown sugar
1 1/2 sticks unsalted butter, cut into small cubes
For the Filling:
2 peaches, peeled and thinly sliced
3/4 cup raspberries
1 1/2 tablespoons lemon juice
2 teaspoons vanilla extract
1/2 cup sugar
1/4 cup flour
1/4 teaspoon salt

Directions:

  1. Preheat the oven to 350° F. Line a cake pan with parchment paper.
  2. Combine the flour, rolled oats, almonds and light brown sugar to a large mixing bowl. Add the butter and mix until there are no large chunks of butter.
  3. Press half of the mixture into the pan. Place into the oven and bake for 15 minutes.
  4. In a mixing bowl, combine the peaches, raspberries, lemon juice, and vanilla extract.
  5. In a separate bowl, combine the sugar, flour, and salt. Sprinkle this over the fruit mixture and gently stir to incorporate.
  6. Use a slotted spoon to transfer the fruit mixture into the baked crust. Sprinkle the remaining crust mixture over the fruit. Return to the oven and bake for 35-40 minutes, until golden brown.
  7. Remove from the oven and let cool. Slice into squares and enjoy!
