Peach Raspberry Crumb Bars





Serves 12 |
A simple homemade treat that’s perfectly sweet.
Ingredients:
| For the Crust and Topping: |
| 1 1/2 cups flour |
| 1/2 cup rolled oats |
| 1/2 cup sliced almonds |
| 1/2 cup light brown sugar |
| 1 1/2 sticks unsalted butter, cut into small cubes |
| For the Filling: |
| 2 peaches, peeled and thinly sliced |
| 3/4 cup raspberries |
| 1 1/2 tablespoons lemon juice |
| 2 teaspoons vanilla extract |
| 1/2 cup sugar |
| 1/4 cup flour |
| 1/4 teaspoon salt |
Directions:
- Preheat the oven to 350° F. Line a cake pan with parchment paper.
- Combine the flour, rolled oats, almonds and light brown sugar to a large mixing bowl. Add the butter and mix until there are no large chunks of butter.
- Press half of the mixture into the pan. Place into the oven and bake for 15 minutes.
- In a mixing bowl, combine the peaches, raspberries, lemon juice, and vanilla extract.
- In a separate bowl, combine the sugar, flour, and salt. Sprinkle this over the fruit mixture and gently stir to incorporate.
- Use a slotted spoon to transfer the fruit mixture into the baked crust. Sprinkle the remaining crust mixture over the fruit. Return to the oven and bake for 35-40 minutes, until golden brown.
- Remove from the oven and let cool. Slice into squares and enjoy!
