Sweet Coconut Rice

Serves 4 |
A great side dish to many meals.
|Cooking oil, for cooking rice|
|1 can coconut milk, 13.5 oz.|
|1 cup jasmine rice|
|1 cup chicken broth|
|Salt, to taste|
|Ground black pepper, to taste|
- Pour a small amount of cooking oil into a saucepan and bring to high heat. Once hot, add jasmine rice and saute 1 minute.
- Add coconut milk and chicken broth to the pan. Season with salt and pepper and bring to a boil. Turn down heat to low, cover with a lid and let simmer 20 minutes.
- Turn the heat off and keep the lid on and cook for an additional 10 minutes.
- Fluff the rice with a fork and spoon onto serving plates.
