The Absolute Best Pork Spare Ribs

Serves 6 |
Bringing together dry rub with barbecue sauce to create a flavor explosion.
Ingredients:
1 rack pork spare ribs |
For dry rub |
1 teaspoon garlic powder |
2 tablespoons brown sugar |
1/2 teaspoon sea salt, (finely ground) |
4 tablespoons dark roast coffee |
1/2 teaspoon coriander powder |
1 teaspoon ground black pepper |
1 teaspoon cayenne pepper |
1 teaspoon onion powder |
Cooking oil |
For sauce |
1 tablespoon ground cayenne pepper |
3 tablespoons Dijon mustard |
2 tablespoons fresh lime juice |
1 tablespoon orange juice |
3 tablespoons tomato paste |
1 habanero pepper, finely diced |
2 tablespoons maple syrup |
1 cup dark rum |
1 tablespoon chili paste |
Directions:
- Mix together all dry rub ingredients together very well, except cooking oil. Add cooking oil slowly. Add enough cooking oil to make a thick paste.
- Pat dry ribs before applying dry rub. Coat spare ribs with dry rub evenly.
- Preheat oven to 225 degrees F.
- Place spare ribs on a wire rack in the oven. Roast for 4-5 hours.
- As spare ribs are roasting, mix together all the sauce ingredients. Brush sauce over spare ribs and then place spare ribs back in the oven and broil for 4-6 minutes.
