Garlic and Rosemary Roasted Chicken and Red Potatoes

Serves 6 | 
Deliciously simple and wholly satisfying.

Ingredients:

1 whole chicken
Salt, to taste
Ground black pepper, to taste
10 cloves garlic, unpeeled
6 sprigs fresh rosemary
12 red potatoes
4 yellow onions, peeled
Olive oil, for cooking

Directions:

  1. Preheat oven to 400° F.
  2. Place the chicken in a shallow roasting pan. Generously season with salt and pepper. Fill the cavity with 4 cloves of garlic and the rosemary. Arrange the red potatoes around the perimeter of the pan. Drizzle olive oil over chicken and potatoes.
  3. Place in the oven and roast for 30 minutes.
  4. Remove from the oven and add the yellow onions and the remaining 6 garlic cloves to the perimeter in the roasting pan.
  5. Place back in the oven and roast for an additional 30 minutes and enjoy!
