Garlic and Rosemary Roasted Chicken and Red Potatoes





Serves 6 |
Deliciously simple and wholly satisfying.
Ingredients:
| 1 whole chicken |
| Salt, to taste |
| Ground black pepper, to taste |
| 10 cloves garlic, unpeeled |
| 6 sprigs fresh rosemary |
| 12 red potatoes |
| 4 yellow onions, peeled |
| Olive oil, for cooking |
Directions:
- Preheat oven to 400° F.
- Place the chicken in a shallow roasting pan. Generously season with salt and pepper. Fill the cavity with 4 cloves of garlic and the rosemary. Arrange the red potatoes around the perimeter of the pan. Drizzle olive oil over chicken and potatoes.
- Place in the oven and roast for 30 minutes.
- Remove from the oven and add the yellow onions and the remaining 6 garlic cloves to the perimeter in the roasting pan.
- Place back in the oven and roast for an additional 30 minutes and enjoy!
