Seared Italian Sausage with Peppers

Serves 4 |
Skillet cooked to sizzling perfection.
Ingredients:
8 Italian sausages, mild or hot |
3 tablespoons olive oil |
3 green bell peppers, sliced |
3 red bell peppers, sliced |
1 teaspoon garlic, finely chopped |
1 sweet onion, sliced |
2 tablespoons balsamic vinegar |
Salt, to taste |
Ground black pepper, to taste |
Directions:
- Fill a large skillet with about 1/4-inch of water. Place sausages in a skillet, drizzle 1 tablespoon of olive oil over sausages. Cover with a lid and cook for 5 minutes on medium heat. Remove the lid and cook for 10-15 minutes, until sausages are well browned. Remove from heat, place lid back on and set aside.
- Heat the remaining 2 tablespoons of olive oil in a separate skillet over medium heat. Once hot add the bell peppers, garlic and sweet onion. Cook until peppers are soft, stirring often. Remove from heat, drizzle balsamic vinegar top vegetables and season salt and pepper.
- Add the veggies to the sausage skillet, cover and cook for 5 minutes.
- Transfer sausages and veggies to serving plates and enjoy!
