Surprisingly easy and oh so delicious.

Ingredients:

2 cup vegetable broth
1/2 cup carrot, finely shredded
1/4 cup celery, finely chopped
1/4 cup onion, finely chopped
2 cup milk
1/4 cup flour
dash pepper
1 cup American cheese, shredded

Directions:

  1. In a medium saucepan combine vegetable broth, carrot, celery, and onion. Bring to boiling; reduce heat. Cover and simmer for 6 to 8 minutes or till vegetables are tender.
  2. Combine milk, flour, and pepper. Stir into broth mixture. Cook and stir till thickened and bubbly. Cook and stir 1 minute more. Add cheese; stir till melted.
