Cheese Soup





Serves 5 |
Surprisingly easy and oh so delicious.
Ingredients:
| 2 cup vegetable broth |
| 1/2 cup carrot, finely shredded |
| 1/4 cup celery, finely chopped |
| 1/4 cup onion, finely chopped |
| 2 cup milk |
| 1/4 cup flour |
| dash pepper |
| 1 cup American cheese, shredded |
Directions:
- In a medium saucepan combine vegetable broth, carrot, celery, and onion. Bring to boiling; reduce heat. Cover and simmer for 6 to 8 minutes or till vegetables are tender.
- Combine milk, flour, and pepper. Stir into broth mixture. Cook and stir till thickened and bubbly. Cook and stir 1 minute more. Add cheese; stir till melted.
