Cubano Carnitas Sandwiches

Toasty, cheesy and undeniably good!

Ingredients:

4 Ciabatta Rolls, split
1 tablespoon spicy brown mustard
1 cup shredded Swiss cheese
1/2 cup mayonnaise
2 cups cooked shredded pork roast
Olive oil, for the skillet
8 slices deli ham
16 dill pickles, sliced

Directions:

  1. In a mixing bowl, combine spicy mustard, shredded Swiss cheese and mayonnaise. Spread a generous amount of the mustard mix over both ciabatta rolls. Layer ham, shredded pork and dill pickle slices over mustard mix. Place on top bun. Repeat to make 3 more sandwiches.
  2. Preheat large skillet over medium-high heat and pour in enough olive oil to cover bottom of the skillet. Place all of the sandwiches in pan together. Toast sandwiches for about 4-5 minutes per side or until browned.
