Mango & Black Bean Salad

The perfect side for summertime dinners.


3 tablespoons fresh lime juice
2 tablespoons olive oil
1 can black beans, drained and rinsed, 15 oz.
1 mango, peeled and chopped
1 avocado, peeled and chopped
1/2 red onion, diced
2 tablespoons minced fresh parsley
1 cup shredded Romaine lettuce
Tabasco sauce, to taste
Salt, to taste
Ground black pepper, to taste


  1. In a salad bowl, whisk together lime juice and olive oil.
  2. Add black beans, mango, avocado, red onion and parsley to mixing bowl. Stir together and season with salt and pepper.
  3. Cover and let stand for 15 minutes.
  4. After 15 minutes, add Romaine lettuce, toss together and transfer to serving bowls.
