Mango & Black Bean Salad

The perfect side for summertime dinners.
|3 tablespoons fresh lime juice|
|2 tablespoons olive oil|
|1 can black beans, drained and rinsed, 15 oz.|
|1 mango, peeled and chopped|
|1 avocado, peeled and chopped|
|1/2 red onion, diced|
|2 tablespoons minced fresh parsley|
|1 cup shredded Romaine lettuce|
|Tabasco sauce, to taste|
|Salt, to taste|
|Ground black pepper, to taste|
- In a salad bowl, whisk together lime juice and olive oil.
- Add black beans, mango, avocado, red onion and parsley to mixing bowl. Stir together and season with salt and pepper.
- Cover and let stand for 15 minutes.
- After 15 minutes, add Romaine lettuce, toss together and transfer to serving bowls.
