Roasted Sweet Potato Wedges

A healthy and flavorful alternative to fries.
Ingredients:
2 tablespoons olive oil |
3 tablespoons brown sugar |
1/4 teaspoon ground nutmeg |
1 teaspoon salt |
1/2 teaspoon pepper |
4 lb sweet potatoes, peeled and cut into wedges |
8 sprigs fresh thyme |
Directions:
- Preheat oven to 400° F.
- Combine olive oil, brown sugar, nutmeg, salt and pepper in a large bowl. Add sweet potato wedges and toss to coat.
- Transfer the sweet potato wedges to a large rimmed baking sheet; arrange in a single layer. Scatter the thyme over the top.
- Roast, turning once, about 1 hour, until the edges are dark brown, and the wedges are crisp.
