Easy Beef and Vegetable Stew

Serves 6 | 
A fast way to enjoy a slow cooked classic.

Ingredients:

1 lb boneless sirloin steak, cut into 1/2-inch cubes
1 lb frozen vegetables, thawed
1 can tomato sauce, 15 oz.
1 can beef broth, 15 oz.
2 cans vegetable juice, 6 oz. each

Directions:

  1. Spray 10-inch non-stick skillet with cooking spray; heat over medium-high heat. Cook beef for 10 minutes, turning occasionally, until brown.
  2. Transfer beef cubes to a large pot. Add vegetables, tomato sauce, beef broth and vegetable juice. Stir all ingredients together. Heat pot to boiling. Once boiling reduce heat to low, cover and let simmer for 5 minutes, stirring occasionally.
