The Perfect Roasted Chicken





Serves 8 |
Crisp on the outside, tender and juicy on the inside.
Ingredients:
| Kosher salt, to taste |
| 1 lemon, sliced thin |
| 8 lb whole chicken |
| Fresh rosemary, for seasoning |
| Ground black pepper, to taste |
| Fresh thyme, for seasoning |
| 2 tablespoons olive oil |
Directions:
- Preheat oven to 425° F. Arrange rack in the middle of the oven.
- Dry chicken with paper towels.
- Drizzle olive oil over chicken, rub in well. Generously season with salt and pepper.
- Place rosemary, lemon and thyme inside chicken.
- Place chicken breast side up in roasting pan. Cook for 20 minutes. Then reduce heat to 375° F. Cook for additional 60 minutes.
- Remove chicken from oven. Let cool for 20 minutes before carving.
