The Perfect Roasted Chicken

Serves 8 | 
Crisp on the outside, tender and juicy on the inside.

Ingredients:

Kosher salt, to taste
1 lemon, sliced thin
8 lb whole chicken
Fresh rosemary, for seasoning
Ground black pepper, to taste
Fresh thyme, for seasoning
2 tablespoons olive oil

Directions:

  1. Preheat oven to 425° F. Arrange rack in the middle of the oven.
  2. Dry chicken with paper towels.
  3. Drizzle olive oil over chicken, rub in well. Generously season with salt and pepper.
  4. Place rosemary, lemon and thyme inside chicken.
  5. Place chicken breast side up in roasting pan. Cook for 20 minutes. Then reduce heat to 375° F. Cook for additional 60 minutes.
  6. Remove chicken from oven. Let cool for 20 minutes before carving.
