Baja Fish Tacos with Cabbage Slaw

A fresh take on a Mexican classic.

Ingredients:

2 tablespoons taco seasoning
1 tablespoon orange juice
1 tablespoon lime juice
1 lb. white fish fillets, cut into bite-sized pieces
1 tablespoon vegetable oil
2 cups shredded green cabbage
1/2 cup chopped green onions
1/2 cup sour cream
8 soft taco tortillas, corn or flour
8 lime wedges, for garnish

Directions:

  1. Combine taco seasoning, orange juice and lime juice in a mixing bowl.
  2. Add fish to bowl and toss to coat.
  3. Heat oil in a nonstick skillet over medium-high heat.
  4. Add fish and saute 5 minutes or until fish is fully cooked through.
  5. In a separate mixing bowl, combine cabbage, onions, and sour cream.
  6. Warm tortillas according to package directions; spoon about 1/4 cup cabbage mixture down the center of each tortilla.
  7. Divide fish evenly among tortillas and fold in half.
  8. Serve with lime wedges.
