Light and Crispy Catfish Fillets

An incredibly simple recipe to make delectable breaded catfish.
Ingredients:
4 Catfish fillets |
Salt, to taste |
Ground black pepper, to taste |
1/3 cup yellow cornmeal |
1 tablespoon paprika |
Vegetable cooking spray |
Directions:
- Sprinkle catfish fillets evenly with salt and pepper.
- In a shallow dish, combine yellow cornmeal and paprika. Dredge fillets in cornmeal mixture; coat lightly with vegetable cooking spray.
- Cook catfish in a hot, nonstick skillet over medium heat for 3 to 4 minutes per side or until fish flakes easily when tested with a fork and is opaque and fully cooked throughout.
