Marinated Shrimp

Serves 6 to 8 |
Ingredients:
1/4 cup fresh mint |
1 tablespoon ginger, grated |
1 tablespoon grapefruit juice |
1 tablespoon grapefruit zest |
3 tablespoons extra virgin olive oil |
1/2 teaspoon kosher salt |
1 lb medium shrimp, cooked |
Directions:
- Chop mint then place in a medium size bowl.
- Add ginger, grapefruit juice, grapefruit zest, olive oil and salt; stir to combine.
- Add shrimp; stir to combine.
- Place in refrigerator and marinate for 10 minutes before serving.
