Lemon Basil Chicken Salad

Serves 4 | 
Highly versatile and wildly flavorful.

Ingredients:

2 cups cooked, shredded chicken
1/4 cup finely diced red onion
2 stalks celery, finely diced
1/4 cup mayonnaise
1/4 cup plain Greek yogurt
1/4 teaspoon black pepper
2 tablespoons lemon juice
1 cup chopped fresh basil
1 tablespoon lemon zest
1 clove garlic, minced
1/2 teaspoon salt

Directions:

  1. Combine the shredded chicken, red onion, and celery in a large bowl. Set aside.
  2. Mix the mayonnaise, Greek yogurt, black pepper, lemon juice, basil, lemon zest, garlic, and salt in a small bowl.
  3. Pour the dressing over the chicken mixture and toss until well combined.
  4. Serve with your favorite crackers or spread between two slices of bread for a sandwich.
