Shrimp and Zucchini in Garlic Tomato Sauce





Serves 2 |
A fast, easy, and healthy meal.
Ingredients:
1 tablespoon olive oil |
1 cup cherry tomatoes, halved |
1 tablespoon tomato paste |
10 oz shrimp, peeled and deveined |
1/2 teaspoon chili powder |
2 cloves garlic, minced |
1 1/2 cups zucchini, chopped into cubes |
1 tablespoon chopped green olives |
1 tablespoon basil, thinly chopped |
1 tablespoon parsley, thinly chopped |
Directions:
- Drizzle the olive oil into a pan. Bring to medium-high heat. Add the cherry tomatoes. Saute for 2-3 minutes. Lightly press down on the cherry tomatoes with a spatula to release their juices. Add the tomato paste and stir to mix.
- Add the shrimp and chili powder to the pan. Cook and stir for 2-3 minutes. Then add the garlic and zucchini, cook and stir for 3 minutes.
- Turn off the heat. Stir in the olives, basil, and parsley.
- Transfer the shrimp and zucchini to serving plates. Enjoy!
