Greek Baked Eggs





Serves 1 |
Nutrient rich, easy to make and wildly delicious.
Ingredients:
2 eggs |
1 tablespoon extra-virgin olive oil |
1/4 cup finely chopped red onion |
1 cup baby spinach |
3 artichoke hearts, chopped |
1/4 cup crumbled feta cheese, more for garnish |
Crushed red pepper, for garnish, optional |
Directions:
- Preheat the oven to 375 degrees F.
- Pour the olive oil in a medium skillet and swirl around. Bring to medium heat.
- Add the red onions to the skillet. Saute the red onions for a few minutes until tender, then stir in the baby spinach and saute until wilted. Remove the skillet from the heat.
- Transfer the red onion and spinach to a small oven-safe bowl. Add the artichoke hearts followed by the feta. Crack the eggs over top.
- Place the bowl in the oven. Bake for 12-15 minutes, until eggs are cooked to preference.
- Remove the bowl from the oven. Top with crushed red pepper and extra feta. Enjoy!
