Beef and Chorizo Chili





Serves 6 |
Wonderfully flavorful and surprisingly easy to prepare.
Ingredients:
| 1 tablespoon canola oil |
| 1 lb ground beef |
| 1 lb ground chorizo |
| 3 tablespoons chili powder |
| 1/2 tablespoon sea salt |
| 1/2 tablespoon ground black pepper |
| 2 poblano peppers, diced |
| 1 red bell pepper, diced |
| 1 yellow onion, diced |
| 4 cloves garlic, minced |
| 1 can fire-roasted diced tomatoes, 28 oz. |
| 2 cups beef broth |
| 1 can tomato sauce, 15 oz. |
| 1 can pinto beans, drained, 15 oz. |
| 1 can chiles in adobo sauce, diced, undrained, 7 oz. |
Directions:
- Pour the canola oil in a large Dutch oven, bring to medium heat.
- Add the ground beef, ground chorizo, chili powder, salt and pepper. Cook and stir for 10 minutes, until the beef and chorizo are cooked through.
- Add the poblano peppers, red bell pepper, and yellow onion. Cook and stir for 10 minutes, until vegetables are softened. Then add the garlic, diced tomatoes, beef broth, tomato sauce, pinto beans, and chiles in adobo sauce. Stir until well incorporated. Place the lid on the Dutch oven and reduce heat to low. Cook for 30 minutes, then remove the lid and cook for an additional 30 minutes.
- Ladle into serving bowls and enjoy!
