Easy Salsa Chicken Skillet

A healthy dinner that’s on the table in 20 minutes!

Ingredients:

2 boneless, skinless chicken breasts
1 1/2 tablespoons olive oil
1 shallot, finely chopped
2 teaspoon fajita seasoning blend
1 jar salsa, 32 oz.
1 tablespoon chopped fresh cilantro

Directions:

  1. Cut chicken breasts into bite-size pieces.
  2. Pour the olive oil into a large skillet. Bring to medium-high heat. Once hot, add the chicken and saute until lightly browned on all sides. Add the shallot and cook until soft.
  3. Reduce the heat to medium. Sprinkle the fajita seasoning over the chicken and shallots. Stir together then pour in the salsa. Cook for 5 minutes. Then reduce the heat to low and cook for an additional 5 minutes.
  4. Transfer the chicken to serving plates. Spoon the salsa and shallots over top. Garnish with cilantro and enjoy!
