Black Bean Tacos with Avocado Cilantro Lime Crema

Yummy, healthy, and surprisingly easy to make.
Ingredients:
2 cans black beans, drained and rinsed, 14.5 oz each |
1 cup prepared salsa |
1 1/2 teaspoons chili powder |
1 teaspoon ground cumin |
1/2 cup plain Greek yogurt |
1/2 avocado |
1 tablespoon lime juice |
1 clove garlic, minced |
1 cup fresh cilantro |
Salt, to taste |
Ground black pepper, to taste |
8 corn tortillas, warmed, 6-inch |
Diced tomatoes, for serving |
Shredded cheese, for serving |
Shredded romaine lettuce, for serving |
Directions:
- In a medium saucepan combine black beans, salsa, chili powder and cumin. Simmer for 10 minutes, stirring occasionally.
- Place the Greek yogurt, avocado, lime juice, garlic, and cilantro in a food processor, pulse until finely minced. Season with salt and pepper.
- Spread the black bean mixture across the middle of each tortilla. Spoon the avocado cilantro lime crema over the black beans. Then add the tomatoes, cheese, and lettuce. Enjoy!
