Cinnamon Roll Pancakes

Two morning time favorites are finally together.

Ingredients:

For Cinnamon Roll Filling:
1/2 stick butter, melted
1/2 cup brown sugar
2 teaspoons ground cinnamon
For Cinnamon Roll Glaze:
1/2 stick butter
4 tablespoons cream cheese
3/4 cup powdered sugar
1/2 teaspoon vanilla extract
For Pancakes:
2 cups pancake mix
1/2 teaspoon vanilla extract
1 cup whole milk
2 eggs

Directions:

  1. Combine the butter, sugar, and cinnamon together in a bowl to make the filling. Scoop the mix into a piping bag. Cut the tip off. Set aside.
  2. Beat the butter and cream cheese together in a small bowl until smooth. Then add the powdered sugar and beat until light and fluffy. Stir in the vanilla extract.
  3. Scoop the glaze into a second piping bag. Cut the tip off. Set aside.
  4. Whisk together the pancake mix, vanilla extract, whole milk, and eggs in a large mixing bowl until batter is smooth.
  5. Bring a pan to medium heat. Grease with cooking spray. Scoop about 1/2 cup of the pancake batter into the hot pan. Once the pancake batter has spread and bubbles start to form, use the cinnamon roll filling piping bag to make a spiral going outward from the center of the pancake. Flip the pancake and cook for about a 1 minute. Transfer the cinnamon roll pancake to a plate. Repeat with the remaining pancake batter.
  6. Drizzle the cinnamon roll glaze over the pancakes and enjoy!
