Southern-Style BBQ Chicken Nachos

A little spicy, savory and tangy.

Ingredients:

10 oz tortilla chips
1 cup sharp cheddar
1 cup pepper jack cheese
1 1/2 cups black beans
1 lb cooked shredded chicken
BBQ sauce, your preference
2 cups prepared coleslaw
2 green onions, chopped

Directions:

  1. Preheat oven to 350° F. Line a large baking sheet with parchment paper.
  2. Arrange half of the tortilla chips on the baking sheet. Sprinkle with half of the cheddar cheese, pepper jack cheese, shredded chicken and baked beans. Generously drizzle BBQ sauce over top. Repeat the layering with the remaining tortilla chips, cheddar cheese, pepper jack cheese, shredded chicken and baked beans. Drizzle BBQ sauce over top.
  3. Place the baking sheet into the oven. Bake for 5-7 minutes, until cheese is melted.
  4. Remove the baking sheet from the oven. Lift the parchment paper off the baking sheet and transfer the nachos to a large plate. Top the nachos with coleslaw and green onions.
