Slow Cooker Mongolian Chicken

The take-out classic made even easier.

Ingredients:

1 lb boneless skinless chicken breasts, cubed
1/4 cup cornstarch
1/2 cup soy sauce
1/2 cup brown sugar
2 tablespoons olive oil
1/2 cup water
1 cup grated carrots
1/2 teaspoon minced garlic
Cooked rice, for serving
Chopped green onions, for garnish

Directions:

  1. Place the chicken into a resealable container. Sprinkle cornstarch over the chicken. Place the lid on the container and shake to coat chicken.
  2. Add soy sauce, brown sugar, olive oil, water, grated carrots and minced garlic to the container. Cover and shake to coat.
  3. Transfer entire contents of container to the bowl of the slow cooker.
  4. Place the lid on the slow cooker and set to high to cook for 3 hours or set to low to cook for 5 hours.
  5. Spoon cooked rice into serving bowls. Spoon Mongolian chicken and sprinkle green onions over top.
