Sweet Potato Casserole with Pecan Topping

A fun and flavorful twist on traditional potato casserole.


For Casserole:
1 teaspoon ground cinnamon
1 tablespoon coconut oil
4 sweet potatoes
1/2 teaspoon nutmeg
2 tablespoons maple syrup
1 1/2 tablespoons fresh orange juice
1/2 cup coconut milk
For Pecan Topping:
1 teaspoon ground cinnamon
1 teaspoon melted coconut oil
3/4 cup chopped raw pecans
1 tablespoon maple syrup


  1. Preheat oven to 350° F. Fill a large pot with water, bring to a boil.
  2. Peel and dice sweet potatoes into large chunks.
  3. Once water is boiling, add sweet potatoes. Cook for 10 minutes.
  4. Drain water from pot. Add cinnamon, coconut oil, nutmeg, maple syrup, orange juice and coconut milk to pot. Use a hand mixer to blend and mash.
  5. Combine cinnamon, coconut oil, pecans and maple syrup in a mixing bowl. Stir and toss until evenly coated.
  6. Transfer sweet potatoes to a baking dish. Top with candied pecans.
  7. Place baking dish in oven and cook for 15 minutes. (Top should be browned)
