Italian Tuna Salad





Serves 4 |
Tuna salad with some zing and zest.
Ingredients:
4 sun-dried tomatoes |
1/4 red onion, minced |
1 can solid white albacore tuna in water, drained, 12 oz. |
1 rib celery, chopped |
1/4 cup pitted nicoise olives |
1 tablespoon capers, rinsed |
2 tablespoons extra-virgin olive oil |
2 tablespoons fresh lemon juice |
1 teaspoon finely grated lemon zest |
2 tablespoons chopped fresh basil leaves |
Kosher salt, to taste |
Ground black pepper, to taste |
Directions:
- Cover the sun-dried tomatoes with hot water in a bowl. Let sit for 20 minutes, then drain, chop, and put in a mixing bowl.
- Add minced onion to the mixing bowl and stir together with tomatoes.
- Add the tuna, breaking it into large chunks. Add the celery, olives and capers to the bowl. Toss ingredients together.
- Pour olive oil and lemon juice to the bowl, stir together.
- Sprinkle lemon zest and basil over top and toss together.
- Season with salt and pepper.
