Italian Tuna Salad

Serves 4 | 
Tuna salad with some zing and zest.

Ingredients:

4 sun-dried tomatoes
1/4 red onion, minced
1 can solid white albacore tuna in water, drained, 12 oz.
1 rib celery, chopped
1/4 cup pitted nicoise olives
1 tablespoon capers, rinsed
2 tablespoons extra-virgin olive oil
2 tablespoons fresh lemon juice
1 teaspoon finely grated lemon zest
2 tablespoons chopped fresh basil leaves
Kosher salt, to taste
Ground black pepper, to taste

Directions:

  1. Cover the sun-dried tomatoes with hot water in a bowl. Let sit for 20 minutes, then drain, chop, and put in a mixing bowl.
  2. Add minced onion to the mixing bowl and stir together with tomatoes.
  3. Add the tuna, breaking it into large chunks. Add the celery, olives and capers to the bowl. Toss ingredients together.
  4. Pour olive oil and lemon juice to the bowl, stir together.
  5. Sprinkle lemon zest and basil over top and toss together.
  6. Season with salt and pepper.
