Fajita-Style Steak Burritos

All the flavors of a sizzling steak fajita in a burrito.

Ingredients:

1 1/2 lb top sirloin steak, sliced into strips
1 packet fajita seasoning, 1 oz.
3 tablespoons olive oil
1 green bell pepper, sliced into strips
1 red onion, chopped
8 burrito size flour tortillas, warmed
2 cups steamed white rice
1 can chili beans, cooked, 15.5 oz.
2 cups shredded Mexican blend cheese
Sour cream, for serving
Guacamole, for serving

Directions:

  1. Toss steak with 1 tablespoon olive oil and 2/3 of the fajita seasoning packet in a mixing bowl.
  2. Pour 1 tablespoon of olive oil to a large pan and swirl to coat. Preheat large skillet to high heat. Add steak and saute until cooked through. Transfer steak to a plate and cover with aluminum foil to keep warm.
  3. Pour the remaining olive oil into the same pan and add the green pepper and onion, saute for about 5 minutes. Add the last of the fajita seasoning to the veggies and toss to coat.
  4. Place the steak back to the pan and saute for about 5 minutes.
  5. Lay tortillas on serving plates and spoon rice, chili beans, steak and veggie mixture into the middle of the tortilla. Top with shredded cheese, sour cream and guacamole. Fold the two top and bottom ends of the tortilla inward then roll up.
