Savory Pierogi Casserole

The classic dish reimagined.

Ingredients:

3 tablespoons butter
3 tablespoons flour
3 cups skim milk
1/8 teaspoon cayenne pepper
1/8 teaspoon salt
1/8 teaspoon black pepper
1/4 cup breadcrumbs
1 strip bacon, cooked and crumbled
1/4 cup shredded Swiss cheese
1 package frozen cheese and potato pierogis, 12 oz.
1/8 teaspoon paprika

Directions:

  1. Preheat oven to 350° F.
  2. In a medium saucepan, melt butter over medium heat. Once melted, add flour and cook for 2 minutes, stirring constantly. Add milk and cook for 5 minutes, stirring until thickened. Stir in cayenne pepper, salt, and pepper. Remove from heat.
  3. In a small bowl, combine breadcrumbs, bacon, and Swiss cheese. Mix together well. Set aside.
  4. Arrange pierogis in bottom of a shallow casserole dish. Pour milk mixture over pierogis. Sprinkle bread crumb mixture on top. Sprinkle paprika over top of breadcrumbs.
  5. Bake until topping is golden and casserole bubbles, about 20 minutes.
