Cheesy Sweet Onion Casserole





Serves 6 |
A minimal ingredient dinner that's super tasty and easy to make.
Ingredients:
| 5 cups water |
| 2 cups cheese, shredded |
| 3 lbs sweet onion, coarsely chopped |
| 3/4 cup long grain rice |
| 1 cup half & half |
| 1/4 cup butter |
| 1 1/2 teaspoons salt |
Directions:
- Preheat oven to 350° F.
- Butter a large baking dish, set aside.
- Boil water in saucepan, add rice, reduce heat to simmer and cook for 5 minutes. Drain water and set rice aside.
- In a large skillet, melt butter on medium heat. Cook onions for 8 minutes, onion should be lightly cooked, not browned. Add onions to rice pan, stir in salt, half & half and 1 3/4 cheese.
- Pour onion mixture into a large baking dish. Sprinkle remaining cheese on top. Place in oven, bake for 1 hour. The top should be lightly browned when finished.
