Brains and Eyeballs for Halloween

They're tastier than they look!

Ingredients:

1 1/2 lb ground beef
1/2 teaspoon Italian seasonings
1 cup Italian breadcrumbs
1 egg
1/4 teaspoon pepper
1 jar pimiento olives
1 jar spaghetti sauce
1 package spaghetti
Parmesan cheese, for topping

Directions:

  1. Preheat oven to 350° F.
  2. In a large bowl, combine ground beef, Italian seasonings, breadcrumbs, egg, and pepper. Form ground beef mixture into 30 eyeball-sized balls. Carefully insert an olive into each meatball, pimiento facing out.
  3. Lightly coat a baking dish with cooking spray. Set balls in baking dish, cover then bake for 45 minutes.
  4. While eyeballs are cooking, warm spaghetti sauce and prepare spaghetti according to package directions; drain spaghetti. Place spaghetti in a serving bowl then gently place eyeballs atop. Spoon spaghetti sauce on top of pasta and drizzle over eyeballs. Serve with Parmesan cheese.
