Mango Halibut Ceviche

Serves 6 |
Fresh, full of flavor and fantastic!
|2 mangos, (peeled, seeded and diced)|
|1/4 cup lemon juice|
|1/2 cup Vidalia onion, (finely chopped)|
|1/2 bunch cilantro, (chopped)|
|1/3 cup lime juice|
|1 green bell pepper, (seeded and finely chopped)|
|1 1/2 lb halibut, (boneless, skinless, cubed into small pieces)|
|1/4 cup tequila|
|1 teaspoon salt|
|1/2 red onion, (finely chopped)|
|1/4 cup parsley, (chopped)|
|3 jalapeno peppers, (seeded and minced)|
- In a ceramic bowl, combine 1 mango, lemon juice, lime juice, halibut, tequila and jalapeno peppers. Mix together and refrigerate for 2 hours.
- Remove from refrigerator, add Vidalia onion, green bell pepper and red onion. Mix together and refrigerate additional 30 minutes.
- Remove from the refrigerator, add second mango, parsley and cilantro. Season with salt and enjoy!
