Pomegranate and Sweet Potato Salad

Serves 6 | 
An incredibly delicious salad that’s great for any occasion.

Ingredients:

For salad:
1 cup pomegranate arils
Salt, (to taste)
1/2 cup pumpkin seeds
4 sweet potatoes, (cut into 1-inch cubes)
Pepper, (to taste)
1/2 cup feta cheese
1 tablespoon olive oil
For dressing:
2 tablespoons red wine vinegar
2 tablespoons pomegranate juice
1 tablespoon honey
Salt, (to taste)
2 tablespoons olive oil
Pepper, (to taste)

Directions:

  1. Preheat oven to 400° F.
  2. Place sweet potato cubes into a mixing bowl, drizzle 1 tablespoon olive oil into bowl, toss together. Spread sweet potato cubes on a baking sheet, sprinkle potatoes salt and pepper. Place in oven and roast 20-30 minutes, until potatoes are tender.
  3. Place pumpkin seeds, feta cheese and pomegranate arils into a salad bowl. Add sweet potatoes to bowl, toss together.
  4. For dressing, combine honey, pomegranate juice, salt, red wine vinegar, pepper and 2 tablespoons olive oil. Stir ingredients together then drizzle over the salad mixture.
