Mini Roast Beef Sandwiches

Small in size, big on flavor!

Ingredients:

1 lb roast beef, thin sliced, chopped
1/4 cup mustard
1/2 cup walnuts, finely chopped
1/2 lb Havarti cheese, thin sliced
12 dinner rolls
1/4 cup mayonnaise
2/3 cup peach perserves
Salt, optional, to taste
Pepper, optional, to taste

Directions:

  1. Preheat oven to 325° F.
  2. Lightly toast walnuts for 5 minutes in a skillet on medium-low heat.
  3. Combine mustard and mayonnaise in a small bowl. Stir until evenly mixed.
  4. Cut dinner rolls in half, removing tops from bottoms. Spread the peach preserves on the top halves. Lightly sprinkle crushed walnuts on roll tops.
  5. Spread the mayo-mustard mixture on the bottom halves of the rolls.
  6. Place cheese and roast beef on bottom halves. Replace the top halves, salt and pepper if desired. Wrap each dinner roll in aluminum foil.
  7. Place rolls on a baking sheet, bake for 20 minutes. Remove from oven, let cool before serving.
