Coconut Cream and Lime Pie Tarts

Serves 4 | 
A highly delectable alternative to the classic key lime pie.

Ingredients:

1/2 cup agave nectar
1 cup pistachios
1/4 teaspoon salt
24 oz coconut milk, chilled
1/3 cup lime juice
1 avocado
1 teaspoon coconut extract
2 teaspoons lime zest
1/3 cup powdered sugar

Directions:

  1. Spray inside of muffin tin with cooking spray.
  2. Blend together 1/4 cup agave, pistachios and salt in food processor.
  3. Fill each muffin tin evenly, press into tins to make room for filling.
  4. Place avocado, lime juice, 1/4 cup Agave, coconut extract and lime zest into food processor. Blend together well.
  5. Scoop filling into muffin tins. Place tins in freezer.
  6. Whisk together powdered sugar and coconut milk until creamy.
  7. Place cream topping on chilled pie tarts. Place back in freezer for 2 hours.
  8. Allow to thaw for 20 minutes before eating.
