Easy Peach Cobbler

Serves 4 | 
A welcome summer dessert.

Ingredients:

6 peaches, cut into thin wedges
1 tablespoon fresh lemon juice
1 teaspoon cornstarch
1/4 cup sugar
For Topping
1 cup flour
1 teaspoon baking powder
1/2 cup sugar
1/2 teaspoon salt
3/4 stick unsalted butter, cut into small pieces
1/4 cup boiling water

Directions:

  1. Preheat oven to 425° F.
  2. Place peaches in a 2-quart non-reactive baking dish. Drizzle with lemon juice and sprinkle with cornstarch and sugar; toss to combine. Bake in the middle of the oven for 10 minutes.
  3. While peaches are baking, combine flour, baking powder, sugar and salt. Add butter to flour mixture then blend in with a pastry blender or your fingertips until mixture resembles coarse meal. Add water, stirring, until just combined.
  4. Carefully remove baking dish from oven and drop spoonfuls of topping over peaches. Bake in the middle of the oven for about 25 minutes, until topping is golden. Note: As it bakes, the topping will spread.
