Easy Black Bean Soup

Thick, rich and easy to make!

Ingredients:

1 tablespoon olive oil
1/2 cup onion, minced
3 tablespoons carrot, chopped
1/2 cup celery, diced
1/4 cup green bell pepper, diced
1 tablespoon garlic, minced
1 teaspoon chili powder
1 1/2 teaspoons cumin, ground
1 teaspoon oregano, dried
1/4 teaspoon freshly ground black pepper
3 cans black beans, rinsed and drained
2 cups vegetable broth
1 cup water
green onions, sliced

Directions:

  1. Heat oil in a large saucepan over medium heat. Add onion, carrot, celery, and bell pepper; cook until tender, about 10 minutes, stirring occasionally.  
  2. Add garlic, chili powder, cumin, oregano, and black pepper; stir and saute 3 minutes.
  3. Add beans, broth, and water; bring to a boil. Reduce heat, and simmer 15 minutes. Cool slightly before processing in blender.
  4. Serve with sliced green onions.
