Cinnamon Spiced Apple Hummus





Serves 1 bowl |
A sweet, spiced dessert-style hummus.
Ingredients:
| 1 tablespoon coconut oil |
| 2 red apples, peeled, cored, and cut into slices |
| 1 can chickpeas, rinsed and drained, 15 oz. |
| 3 tablespoons light brown sugar |
| 1/4 teaspoon ground nutmeg |
| 1/2 teaspoon ground ginger |
| 1 teaspoon cinnamon |
| 1/2 teaspoon salt |
| 1/4 cup peanut butter |
| 2 tablespoons apple juice |
Directions:
- Add the coconut oil to a large skillet. Bring to medium heat. Add the apple slices and chickpeas. Cook for 5-7 minutes, stirring regularly, until apples are slightly tender.
- Sprinkle the brown sugar, nutmeg, ginger, cinnamon, and salt over the apples and chickpeas. Stir to coat. Cook for about 4 minutes, then remove the skillet from the heat. Let rest.
- Pour everything into a blender. Add the peanut butter and apple juice. Pulse until smooth.
- Transfer the hummus to a serving bowl. Enjoy!
