Vegan Lemon Pepper Glazed Cauliflower





Serves 4 |
A delectable alternative to wings.
Ingredients:
| 1 head cauliflower, cut into florets |
| 2 tablespoons olive oil |
| 1 teaspoon garlic salt |
| 1 tablespoon cornstarch |
| 1/2 teaspoon sea salt |
| 1/2 teaspoon garlic powder |
| 2 tablespoons maple syrup |
| 1/3 cup fresh lemon juice |
| 1 teaspoon black pepper |
| 1 tablespoon lemon zest |
| 1 tablespoon soy sauce |
| 1 teaspoon cornstarch |
| 2 tablespoons water |
Directions:
- Preheat to 425°F. Line a baking sheet with parchment paper.
- Add the cauliflower to a mixing bowl. Drizzle the olive oil over top, then sprinkle with garlic salt and cornstarch. Toss to coat. Spread the cauliflower on the baking sheet.
- Place the cauliflower in the oven to roast for 30 minutes, flipping after 15 minutes, until the edges of the cauliflower are golden and crisp. Remove from the oven.
- Combine the garlic powder, maple syrup, lemon juice, black pepper, lemon zest, and soy sauce in a saucepan. Bring to a simmer.
- Whisk the cornstarch and water in a small bowl to create a slurry. Stir the cornstarch slurry into the saucepan and let it simmer for 2 minutes until the sauce thickens and becomes glossy. Remove the pan from the heat.
- Place the cauliflower in a large bowl and pour the glaze over the top. Toss to coat. Enjoy!
