Vegan Lemon Pepper Glazed Cauliflower

A delectable alternative to wings.

Ingredients:

1 head cauliflower, cut into florets
2 tablespoons olive oil
1 teaspoon garlic salt
1 tablespoon cornstarch
1/2 teaspoon sea salt
1/2 teaspoon garlic powder
2 tablespoons maple syrup
1/3 cup fresh lemon juice
1 teaspoon black pepper
1 tablespoon lemon zest
1 tablespoon soy sauce
1 teaspoon cornstarch
2 tablespoons water

Directions:

  1. Preheat to 425°F. Line a baking sheet with parchment paper.
  2. Add the cauliflower to a mixing bowl. Drizzle the olive oil over top, then sprinkle with garlic salt and cornstarch. Toss to coat. Spread the cauliflower on the baking sheet.
  3. Place the cauliflower in the oven to roast for 30 minutes, flipping after 15 minutes, until the edges of the cauliflower are golden and crisp. Remove from the oven.
  4. Combine the garlic powder, maple syrup, lemon juice, black pepper, lemon zest, and soy sauce in a saucepan. Bring to a simmer.
  5. Whisk the cornstarch and water in a small bowl to create a slurry. Stir the cornstarch slurry into the saucepan and let it simmer for 2 minutes until the sauce thickens and becomes glossy. Remove the pan from the heat.
  6. Place the cauliflower in a large bowl and pour the glaze over the top. Toss to coat. Enjoy!
