Creamy Sausage Gnocchi Soup





Serves 6 |
Rich, flavorful, and read in 30 minutes!
Ingredients:
4 Italian sausages, diced |
1 tablespoon olive oil |
1 yellow onion, finely chopped |
3 cloves garlic, minced |
4 cups chicken broth |
1 cup heavy cream |
1 teaspoon Italian seasoning |
1/2 teaspoon crushed red pepper flakes |
1 can diced tomatoes, undrained, 14.5 oz |
1 lb potato gnocchi |
2 cups fresh spinach, roughly chopped |
Salt, to taste |
Black pepper, to taste |
1/4 cup grated Parmesan cheese |
Directions:
- Pour the olive oil into a large pot. Bring to medium heat. Once hot, add the sausage and cook until browned. Transfer the sausage to a plate. Set it aside.
- In the same pot, saute the onions for 3-4 minutes, until softened. Add the garlic and cook for 1 minute. Then add the chicken broth, heavy cream, Italian seasoning, red pepper flakes, and diced tomatoes. Return the cooked sausage to the pot and stir until well mixed.
- Reduce the heat to low, bringing to a gentle simmer. Then add the gnocchi, and cook for 3-4 minutes, until the gnocchi floats to the top.
- Stir in the spinach and cook for 1-2 minutes, until the spinach begins to wilt. Season with salt and pepper to taste.
- Spoon the soup into serving bowls. Garnish with Parmesan cheese. Enjoy!
