Parmesan Spinach Mushroom Pasta Skillet





Serves 4 |
Quick to make and wonderfully delicious.
Ingredients:
1 box farfalle pasta, 16 oz. |
3 tablespoons olive oil |
3 cloves garlic, minced |
14 oz mushrooms, sliced |
10 oz fresh spinach |
1/2 cup vegetable broth |
Salt, to taste |
Black pepper, to taste |
1/2 cup parmesan cheese, grated |
1 teaspoon Italian seasoning |
Directions:
- Cook the pasta according to the package instructions. Drain the water and set aside.
- Pour 2 tablespoons of olive oil into a large skillet, bring to medium heat. Once hot, add the mushrooms and saute for about 3 minutes, until lightly browned.
- Add the chopped garlic to the skillet. Cook and stir for 30 seconds.
- Pour in the vegetable broth. Reduce the heat to low and cook for about 2 minutes.
- Transfer the mushrooms to a plate. Set aside.
- Add the spinach to the skillet and cook for 2 minutes, until wilted. Season with salt and pepper, if desired.
- Add the pasta and mushrooms to the skillet, toss to combine.
- Sprinkle the parmesan, Italian seasoning, and remaining olive oil over the pasta, mushrooms, and spinach. Stir to combine.
- Spoon onto serving plates. Enjoy!
