Hawaiian Style Garlic Shrimp

Take your taste buds to the tropics.

Ingredients:

1 lb large shrimp, peeled and deveined
2 tablespoons soy sauce
1 tablespoon brown sugar
1 tablespoon minced ginger
4 cloves garlic, minced
Sea salt, to taste
Black pepper, to taste
1 tablespoon coconut oil
1 tablespoon sesame oil
1 red bell pepper, sliced
1 cup pineapple chunks
2 green onions, sliced

Directions:

  1. Place the shrimp in a sealable bowl. Add the soy sauce, brown sugar, ginger, and garlic. Sprinkle a pinch of salt and pepper. Toss to coat. Let marinate for 15-20 minutes.
  2. Pour the coconut oil and sesame oil in a large skillet. Bring to medium heat. Then add the sliced red bell pepper and saute for 3-4 minutes, until they begin to soften.
  3. Add the marinated shrimp to the skillet. Cook and stir for about 3-5 minutes, until the shrimp are pink and opaque. Then stir in the pineapple chunks and cook for 2-3 minutes, allowing the pineapple to caramelize slightly. Remove the skillet from the heat.
  4. Sprinkle the sliced green onions over top. Transfer to serving plates. Enjoy!
