Mushroom Fajitas

Healthy, hearty, and bursting with Tex-Mex flavor.

Ingredients:

4 portobello mushrooms, sliced thick
1 yellow onion, thinly sliced
1 green bell pepper, sliced into strips
1 red bell pepper, sliced into strips
1 yellow bell pepper, sliced into strips
3 tablespoons olive oil
3 tablespoons fresh lime juice
2 tablespoons fajitas seasoning
1/4 teaspoon cayenne pepper
8 flour tortillas, warmed

Directions:

  1. Preheat the oven to 450°F. Line a large baking sheet with aluminum foil.
  2. Add the mushrooms, onion, and bell peppers to a mixing bowl. Drizzle the olive oil and lime juice over the vegetables. Sprinkle the fajita seasoning and cayenne pepper. Toss to coat.
  3. Pour the mushrooms, onion, and bell peppers on the baking sheet.
  4. Place in the oven to bake for 15-18 minutes, until the veggies are tender. Remove from oven.
  5. Serve the warmed tortillas with the mushroom fajitas. Enjoy!
