Grilled Citrus Dijon Chicken





Serves 4 |
Easy, delicious and great any night.
Ingredients:
4 boneless skinless chicken breasts |
2 tablespoons Dijon mustard |
3 tablespoons lemon juice |
2 tablespoons lime juice |
1/2 cup orange juice |
1/2 cup olive oil |
1 teaspoon salt |
1 teaspoon garlic powder |
1 teaspoon Italian seasoning |
1 teaspoon finely chopped thyme |
1 teaspoon finely chopped oregano |
1/4 teaspoon crushed red pepper flakes |
Directions:
- Place the chicken breasts in a sealable container.
- Stir together the Dijon mustard, lemon juice, lime juice, orange juice, olive oil, salt, garlic powder, Italian seasoning, thyme, oregano, and red pepper flakes in a bowl. Reserve 1/4 cup of the marinade.
- Pour the marinade over the chicken. Close the container and toss to coat well. Place the chicken and reserved marinade in the refrigerator for 1 hour.
- Preheat the grill to medium heat. Brush the grill grates with oil. Place the chicken breasts on the grill and cook for 5 minutes. Flip and brush half of the reserved marinade over the top of each chicken breast. Cook for an additional 5 minutes, then flip and brush the remaining marinade over the tops of the chicken breasts. Cook for 5 more minutes.
- Transfer the chicken to serving plates. Enjoy with your favorite sides.
