Jalapeno Peach Chicken Skewers





Serves 15 |
Great as a weekend dinner or a party appetizer.
Ingredients:
| 15 wooden skewers, soaked in water for 30 minutes |
| 2 lb boneless, skinless chicken breasts, cut into cubes |
| 2 tablespoons extra virgin olive oil |
| 1/2 teaspoon ground black pepper |
| 1/2 teaspoon chili powder |
| 1 teaspoon kosher salt |
| 4 yellow peaches, quartered, then halved |
| 3 jalapeno peppers, seeded, cut into chunks |
| For the Peach Glaze: |
| 1 teaspoon soy sauce |
| 1/5 cup peach preserves |
| 1 teaspoon Dijon mustard |
| 1/2 teaspoon minced garlic |
| 1 teaspoon apple cider vinegar |
| 1 tablespoon extra-virgin olive oil |
| 1/8 teaspoon ground black pepper |
| 1/8 teaspoon red pepper flakes |
| 1/2 teaspoon kosher salt |
Directions:
- Place the chicken in a large mixing bowl. Add the olive oil, black pepper, chili powder, and salt. Toss until well coated.
- Thread each skewer with peaches, chicken, jalapenos.
- Bring the grill to medium-high heat. Arrange the skewers on the grill. Cook for 8-10 minutes per side.
- Stir together the soy sauce, peach preserves, Dijon mustard, garlic, apple cider vinegar, olive oil, black pepper, red pepper flakes and salt in a medium saucepan. Bring to medium-low heat. Cook and stir until warmed through.
- Brush the chicken skewers with a generous amount of peach glaze. Enjoy!
