Avocado Shrimp Salad





Serves 6 |
Light, flavorful, and so easy to make.
Ingredients:
| 1 lb large shrimp, peeled, deveined, and cooked |
| 2 avocados, diced |
| 1/4 cup finely chopped red onion |
| 1/2 cup halved cherry tomatoes |
| 1/4 cup chopped fresh parsley |
| 1/4 cup diced cucumber |
| 2 tablespoons lime juice |
| 1 tablespoon olive oil |
| Salt, to taste |
| Ground black pepper, to taste |
Directions:
- Chop the shrimp into small pieces. Set aside.
- Combine the diced avocados, red onion, tomatoes, parsley, and cucumber in a large mixing bowl. Set aside.
- In a separate smaller bowl, whisk together the lime juice, olive oil, salt and pepper.
- Add the shrimp to the avocado mixture. Pour the lime dressing over top and gently toss together until well combined.
- Serve immediately or chill in the refrigerator before serving.
