Cottage Cheese Lasagna Roll Ups





Serves 4 |
Big on flavor and high in protein.
Ingredients:
| 8 uncooked lasagna noodles |
| 1 egg |
| 2 tablespoons pesto |
| 2 cups 2% cottage cheese, drained |
| 1/2 cup grated Parmesan cheese |
| 1/4 cup chopped parsley |
| 1 teaspoon kosher salt |
| Ground black pepper, to taste |
| 2 cups marinara sauce |
| 1/2 cup shredded mozzarella cheese |
Directions:
- Preheat oven to 350° F.
- Bring a large pot of water to a boil. Cook noodles according to package directions.
- Combine the egg, pesto, cottage cheese, Parmesan, parsley, kosher salt and black pepper in a large mixing bowl. Stir until combined.
- Ladle half of the marinara sauce along the bottom of a large oval baking dish.
- Place a piece of wax paper on the counter and lay out lasagna noodles. Spoon 1/3 cup of the cottage cheese mixture on each noodle. Carefully roll up the noodles and place seam side down in the baking dish.
- Ladle the remaining marinara sauce over the noodles and sprinkle on the mozzarella cheese.
- Cover with aluminum foil and place in the oven. Bake for 40 minutes.
- Remove from the oven. Divide the lasagna roll ups amongst serving plate. Enjoy!
