BLT Bagels with Garlic Mayo

A yummy twist on an all-time favorite sandwich.

Ingredients:

For the Garlic Mayo:
3/4 cup mayonnaise
2 cloves garlic, finely minced
1 tablespoon lemon juice
1/4 teaspoon salt
For the BLT Bagels:
8 slices thick cut bacon
4 everything bagels, halved and toasted
2 cups baby arugula
2 beefsteak tomatoes, sliced thick
Salt, to taste
Ground black pepper, to taste

Directions:

  1. Whisk together the mayonnaise, lemon juice, salt, and garlic in a small bowl. Cover and place in the refrigerator for 30 minutes.
  2. Cut the bacon slices in half. Place the bacon into a large pan and cook over medium heat for 4-6 minutes per side, until crispy. Transfer the bacon to a paper towel-lined plate. Repeat with the remaining slices.
  3. Slice bagels in half. Place in the toaster and cook until golden brown.
  4. Spread a generous amount of the garlic mayo over each bagel half.
  5. Lay the arugula on the bottom half of the bagel. Place a tomato slice on top then season with salt and pepper. Place 4 pieces of bacon on the tomatoes. Place the top half of the bagel on the bacon to complete the sandwich. Cut the bagels in half and enjoy!
