BLT Bagels with Garlic Mayo





Serves 4 |
A yummy twist on an all-time favorite sandwich.
Ingredients:
| For the Garlic Mayo: |
| 3/4 cup mayonnaise |
| 2 cloves garlic, finely minced |
| 1 tablespoon lemon juice |
| 1/4 teaspoon salt |
| For the BLT Bagels: |
| 8 slices thick cut bacon |
| 4 everything bagels, halved and toasted |
| 2 cups baby arugula |
| 2 beefsteak tomatoes, sliced thick |
| Salt, to taste |
| Ground black pepper, to taste |
Directions:
- Whisk together the mayonnaise, lemon juice, salt, and garlic in a small bowl. Cover and place in the refrigerator for 30 minutes.
- Cut the bacon slices in half. Place the bacon into a large pan and cook over medium heat for 4-6 minutes per side, until crispy. Transfer the bacon to a paper towel-lined plate. Repeat with the remaining slices.
- Slice bagels in half. Place in the toaster and cook until golden brown.
- Spread a generous amount of the garlic mayo over each bagel half.
- Lay the arugula on the bottom half of the bagel. Place a tomato slice on top then season with salt and pepper. Place 4 pieces of bacon on the tomatoes. Place the top half of the bagel on the bacon to complete the sandwich. Cut the bagels in half and enjoy!
