Spicy Greek Feta Dip

Simple ingredients with big flavors.

Ingredients:

2 red bell peppers
Red chili flakes, to taste
1 cup crumbled Feta cheese
3 tablespoons olive oil
2 tablespoons red wine vinegar

Directions:

  1. Preheat oven to 450° F. Line a baking sheet with parchment paper.
  2. Cut the bell peppers in half and remove the seeds. Place the peppers cut side down on the baking sheet. Brush the peppers with olive oil.
  3. Place the peppers in the oven. Roast the peppers for 25 minutes. Remove and let cool.
  4. Place the roasted peppers, red chili flakes, crumbled Feta, olive oil, and red wine vinegar into a blender. Pulse until smooth.
  5. Spoon the dip from the blender into a serving bowl. Top with red pepper flakes, if desired.
